I made a cake today that has no sugar, uses 3 different fruit/vegetables and tastes amazing. Definitely an achievement in my opinion.

Cake Recipe
1 1/2 cups almond meal
1 1/2 cups plain flour (double sifted)
1 1/2 tsp baking soda (double sifted)
1/2 tsp salt
1 1/2 tsp cinnamon
1/4 cup melted butter
1/3 cup honey
1 1/2 tsp pure vanilla extract
3 eggs
1 cup grated carrot
1 cup grated zucchini
1 cup grated apple (I like Granny Smith’s for cooking)
Preheat oven to 180oC. Grease a 25cm cake pan. In a bowl combine dry ingredients. In a separate bowl combine wet ingredients. Pour wet mixture into the dry mixture and stir to incorporate. Pour into prepared cake pan and cook in oven for 40-45 minutes or until a toothpick inserted into the center comes out clean.
Note - I used a cream cheese icing (250g cream cheese, vanilla extract and lemon juice), but there are many icings that would suit.
